I love a good taco and margarita! Here is my twist on taco Tuesday and the perfect Mezcal-ita (since I love Mezcal)
TACOS:
Ingredients
1 packet Trader Joe’s Taco Seasoning Mix
2 packs Plant based protein patties
1 tbsp of worcestershire sauce
Olive oil
Salt & Pepper to taste (optional as the seasoning mix already had enough for my tasting)
Chopped lettuce
Tortillas
Toppings:
Fresh Cilantro
Cheese (cotija or feta) - I used a dairy-free kind
Pickled onions
Lime
Guacamole
Instructions
In a large skillet heat the olive oil. When hot, place the patties and with a fork pull them apart so that they crumble like ground beef. Add the seasoning packet, the Worcestershire sauce and cook thoroughly. Once this is cooked taste and add salt & pepper if you need. Set aside.
To assemble the tacos, warm up the tortilla's and place some of the meat, lettuce, guacamole, some pickled onions, cheese and top with fresh cilantro. Top it off with some fresh lime juice.

MEZCAL-ITA:
Ingredients
1.5 oz of Mezcal (this is a smokier version of tequila.)
1 oz of lime juice (fresh is better)
1 oz of triple sec (agave or simple syrup are fine)
1 jalapeno (sliced) - optional
1 lime (cut into wedges)
Salt & chili powder to rim the glass
Fresh orange juice
Instructions
Wet the rim of your cocktail glass with the lime wedge. Place the wet part on the salt & chili powder mixture to cover the rim.
In a cocktail shaker place a few ice cubes, the mezcal, lime juice, triple sec and jalapenos. Cover and give it a hard shake (app. 1 minute – I like to shake until the cocktail shaker gets very cold and starts to frost.
Pour contents into the cocktail glass and add a splash of the orange juice. Garnish with a lime wedge.
