Grilled Cheese & Tomato Soup

This is one of my favorite soups of all time. It's super easy to make and it requires less than ten ingredients (okay maybe about 12) BUT you probably have most of them already in your fridge and pantry.


Ingredients


Tomato Soup:

- 2 to 3 tomatoes

- half a red onion

- half a can of coconut milk

- about 2 tbsp of tomato paste

- olive oil

- about 3 cups of water

- italian seasoning

- salt & pepper to taste


Grilled Cheese:

- 2 slices of the Trader Joe's French Brioche bread

- 2 slices of Trader Joe's Alpine semisoft cheese

- butter


In a large pan, heat olive oil and cook the onion (about 4 minutes on medium heat). Once onions are cooked, throw in the chopped tomatoes, Italian seasoning, salt and pepper to taste and mix for about a minute. Throw in water and the tomato paste and let water boil. Once the water is boiling, turn off the heat. Let this cool for about 5 to 7 minutes then transfer contents to a blender. Blend to desired consistency then transfer again to same pot. Add the coconut milk and bring to a boil.

For the grilled cheese heat a skilled and some butter on medium-low heat. While you heat the butter, spread some more butter on one side of each bread slice. When the skillet is warm put the bread in the pan non butter side down. Heat for a few minutes then flip. Once you flip, add the two slices of cheese and cover with the other slice of bread - butter side up. Flip the bread and grill until cheese is melted. I like to squeeze my bread with a spatula while it's heating to make the bread a little flatter LOL... Make sure you flip to the other side so it doesn't burn. Once you see the cheese is melted turn the heat off and serve.
